Can I Backup My Xbox 360 Hard Drive And Restore It To A New Larger 360 Hard Drive

If I connect the hard drive to my PC in the way shown using a SATA / IDE  - USB connector, will I be able to make an image and restore it to another hard drive?

I was thinking of using Acronis to take an image, then buy a new 250 GB 360 console and restore the image onto the new hard drive and then use diskpart to extend the volume to include the entire 250 GB. Is that possible?
